In celebration of valentine's day , guests of the event were treat to a demo of how to make 3-D, heart-shaped cupcakes garnished with raspberries and blackberries. Make sure you have Wilton Dimension's Mini Heart Pans.

Serving Size: 1 cupcake
Makes: 12 servings
Cupcake Ingredients:
2 1/4 cups cake flour, sifted
1/4 teaspoon salt
2 1/2 teaspoons baking powder
1/2 cup butter
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla
3/4 cup Driscoll’s strawberries, crushed
Icing Ingredients:
2 cups powdered sugar
1/4 cup low-fat spreadable margarine
1 tsp vanilla extract
2 tbsp fat-free milk
Decorating Ingredients:
Icing
2 packages Driscoll's Raspberries (6 ounce)
Confectioner’s sugar for dusting

Blogger Risa at Baked Perfection celebrated her birthday in November by making these fun sugar cookie cupcakes with vanilla frosting and mini cupcake-shaped cupcake toppers! She writes:

Vanilla has to be one of my favorite flavors, if not my favorite. Since I love vanilla so much I decided that was exactly what I wanted for my birthday. The last several years Zack baked my birthday treat, but unfortunately he was out of town for work on my birthday this past year. Several people offered to make me something, but I really wanted to make these cupcakes and that is exactly what I did. They were so delicious! The cupcake was wonderful and the frosting is my absolute favorite frosting. I have to chew gum while making it and decorating or else I eat it straight out of the bowl. I got the idea for the adorable little cupcake toppers (which are frosted mini Reese's cups) from Confessions of a Cookbook Queen.

These grasshopper cupcakes are by bloggers Chez Us, where you can get the recipe (via LA Times food blog Daily Dish). From Chez Us:

Normally Grasshopper ice cream is a deep green but keeping with the chocolate theme, I opted for a deep dark chocolate cupcake using Scharffen Berger’s unsweetened cocoa powder and strived for not only flavor but moisture and texture; I wanted this cupcake to be dense, moist and flavorful. I made a batter using the coconut butter, chocolate powder and buttermilk and I added crushed Oreo cookies and peppermint oil instead of vanilla extract for the extra flavor. The oil is intense and you only need a small amount to make an impact on the flavor. My frosting was made with more chocolate, sugar, creamy butter and condensed milk. I was afraid the milk may make the end result too sweet, instead it was rich and creamy.

These are from a 2009 post at the food blog Brown Eyed Baker, but were so bright and cheerful-looking, I wanted to share them. She writes:

There are three levels of lemon flavor in the cupcakes that combine to deliver the perfect balance of tart and sweet, and had people fighting over the last cupcake (seriously). The batter is flavored with lemon zest, lemon juice and a punch of limoncello; a tart lemon curd fills the inside of the cupcakes, and on top sits a sweet cream cheese frosting with the subtle tang of limoncello. These are simple and classy, a perfect dessert for a summer meal.

She used the cookbook Hello, Cupcake! and writes:

This took me quite a while but it was a fun project. My bff Cici came to spend the night and we worked on the butterflies together. I used parchment paper to draw outlines of wings that were already in the book. Using melted candy melts, you just have to go over the lines again, and fill it in with different colors. I then used a toothpick to swirl them together and sprinkled nonpareils on them.

I follow a lot of Seattle based bloggers... and one of my favorite is a teenager who is now in Boston for college, Elissa from 17 and Baking. She's home for college and has made a cupcake whose flavors blow me away. Grapefruit and coconut and a green tea frosting... Who would have thought this combination would have been a good one? But as I look at her pictures, read the recipe... I ask myself again, why wouldn't this be a good combination?

True confession: Just as I've never seen certain classic movies like Star Wars, I've never tried Pop Rocks. I sortof know what they are supposed to do/taste like, but I suspect they are one of those candies that you have to truly experience, not just imagine. Well, if I'd known they came in candy cane flavor, I might have tried them sooner! Find out how to make them at the blog An American Cupcake in London (via Flickr).

I made some vanilla frosting and then split it evenly between two bowls and made one half red and added some peppermint extract. I added vanilla extract to the other half.



And since New York City, where I live, is in the middle of a blizzard, posting An American Cupcake in London's snowball cupcakes (devil's food with cream cheese frosting topped with coconut and white chocolate snowflake) also seemed appropriate - click through for recipe.

If you do attempt to make these cupcakes I would suggest sticking them in the freezer for a bit before you frost them to give the top layer of cake a chance to harden up. I should have done this but didn't have time. Also, you can either make the cupcakes from scratch or you can do the abbreviated version from a box.

Would you believe this cupcake is topped with goat cheese frosting?



Well, it's true! Blogger Found Baking made apple spice cupcakes using a Martha Stewart recipe (get the recipe from her blog) and made goat cheese frosting to top them off!

She writes:

The cake uses apple sauce to bring that apple harvest flavor to life. I used unsweetened, organic apple sauce but you can certainly use a homemade apple sauce if you so please (Martha recommends it actually). For those who are not so keen on goat cheese, you can always opt to increase the amount of cream cheese (50/50 ratio with the goat cheese) in the frosting to make it more mellow.

Cupcake Ingredients

3/4 cup of all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/8 teaspoon ground ginger

1/8 teaspoon ground nutmeg

1/8 teaspoon ground cloves

1/4 teaspoon cayenne pepper

1/4 teaspoon salt

1/4 cup unsalted butter (1/2 stick), room temperature

1/2 cup granulated sugar

1 egg

1/2 teaspoon vanilla extract

1/2 cup pumpkin puree



Maple/Brandy Cream Cheese Frosting

8-oz. cream cheese (room temperature)

1/4 cup unsalted butter (1/2 stick), room temperature

1 cup confectioners’ sugar

1/8 cup pure maple syrup

1 tablespoon brandy

2 teaspoons cinnamon


DIRECTIONS:

STEP 1: Preheat oven to 350°. In a large bowl, sift together the flour, baking soda, salt, and spices. It's very important to sift the dry ingredients together so that the batter remains smooth and lump-free.

STEP 2: Place the butter and sugar in the mixing bowl of the Breville Stand Mixer, and blend until smooth and creamy (2 minutes).

STEP 3: Add the egg to the mixture, and beat until incorporated into the butter and sugar mix. Beat in the vanilla.

STEP 4: With the mixer on low speed, alternately add the flour mixture and the pumpkin puree, in small amounts, until it is all incorporated. DO NOT OVER MIX. Only mix until the dry ingredients are wet. Over mixing will make for a heavier cake.

STEP 5: Fill your cupcake tins evenly with the batter using either the two spoon method or with an ice-cream scoop.

STEP 6: Place the cupcakes in the preheated oven, and bake for approximately 20-23 minutes, or until firm to the touch and a toothpick comes out clean. Remove the tin and place on a cooling rack.

STEP 7: Once cool, apply Maple/Brandy Cream Cheese Frosting


Maple/Brandy Cream Cheese Frosting

In the mixing bowl of the Breville Stand Mixer, beat the cream cheese until smooth. Add the butter and beat on medium/high until smooth and creamy.

Add the confectioners’ sugar a bit at a time until incorporated, and fluffy (about 3 minutes on high speed).

Add the maple syrup, brandy, and cinnamon, and mix until incorporated, on medium speed.

I originally posted this recipe back in 2008, but it remains one of my all time favorite holiday cupcakes. If you're looking for a delicious cupcake that incorporates the flavors of the season, look no further. These mini gingerbread cupcakes boast a sophisticated flavor that will satisfy all of your holiday entertaining needs. Enjoy!

Gingerbread Cupcakes with Cream Cheese Frosting
Adapted from Gourmet - January 1990

Cupcake Ingredients
1 1/4 cups all-purpose flour
1 1/2 teaspoons ground ginger
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon allspice
1/4 teaspoon salt
1/2 stick (1/4 cup) unsalted butter
1/2 cup granulated sugar
1/2 cup unsulfured molasses
1 large egg, beaten lightly
1 teaspoon baking soda

Frosting Ingredients
2 tablespoons unsalted butter
8 ounce cream cheese, softened
2-3 cups confectioners' sugar depending on desired consistency
1/2 teaspoon vanilla

Preparation
Into a bowl sift together the flour, the ground ginger, the cinnamon, the cloves, the allspice, and the salt. In another bowl cream 1/2 stick of butter, add the granulated sugar, and beat the mixture until it is fluffy. Beat in the molasses and the egg, beating until the mixture is smooth. In a measuring cup combine the baking soda with 1/2 cup boiling water and stir the mixture to dissolve the baking soda. Stir the mixture into the molasses mixture (the mixture will appear curdled) and stir the molasses mixture into the flour mixture, stirring to combine the ingredients well. Line muffin tins with paper liners and spoon the batter into the liners, filling them halfway. Bake the cupcakes in the middle of a preheated 350°F. oven for 20 minutes, or until a tester comes out clean. (The cupcakes will be flat or slightly indented on top.) Transfer the cupcakes to a rack and let them cool.
In a bowl cream together the cream cheese, and 2 tablespoons butter, add the confectioners' sugar and the vanilla, and beat the mixture until it is fluffy and smooth. Pipe or spread frosting onto cooled cupcakes. Top with desired decorations.
