I always mean to stage my cupcakes but I get lazy after all the baking and I just plop them on a plate. If my guests are lucky, I add a sprig of mint and call it a day.

I for one am very excited about 2011. I don't love New Year's Eve as a holiday but I do like the idea of turning over a new leaf, wrapping up one year and beginning the next, so I'm getting the New Year's celebrating in early with this cupcake by the very talented Anita Jamal on Flickr. She writes:

Red velvet cupcakes can be tricky. First of all, do you fold the baking soda & vinegar into the batter, or mix it in? How much red food coloring should you add? What kind of frosting goes best with red velvet cake? And then I’m not even talking about the likelihood that your cupcakes might overflow or, worse, sink. It seems all so much easier to buy a cake mix for red velvet cupcakes. There’s just one little problem… Red velvet cake mix disgusts me. Not ALL cake mixes, just the red velvet kind. I was feeling brave last night and decided to give this recipe a go. It turned out to be the easiest and best tasting red velvet cake I have ever stumbled upon. Rating: 4.5 out of 5

valentine's day Christmas Cupcakes: Pumpkin Eggnog Cupcakes by Manouschka Guerrier

Back in October when I spoke at Blog World Expo, I had the pleasure of meeting Manouschka Guerrier who stars as one of the chefs on Private Chefs of Beverly Hills. Recently, she held a holiday party at her home in LA, and posted a recipe for pumpkin eggnog cupcakes.

PUMPKIN EGGNOG CUPCAKES
Makes 24 Cuppycakes and a few mini cupcakes
2 cups of agave nectar or 3 cups of sugar
4 cups whole wheat pastry flour
3/4 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
3/4 cup dark rum (Barbancourt Haitian rum’s the BEST)
3 cups low-fat pumpkin eggnog (you can use regular egg nog if you can’t find any)
3/4 cup vegetable oil
3 tsp. vanilla extract
3 tsp almond extract
3 tbsp. apple cider vinegar
3/4 tsp. pumpkin pie spice
3/4 tsp cinnamon
Frosting:
3/4 cup butter, softened
12 tbsp.pumpkin eggnog
6 tbsp. dark rum
pinch of pumpkin pie spice
6+ cups powdered sugar
OR
Use Vanilla frosting or buttercream frosting & add rum, nutmeg & eggnog & mix (I like this option the best cheaper and easier)
Garnish:
ground cinnamon
cinnamon sticks
wafer rolls
Cupcakes:
Preheat oven to 350° F. Line a 12-cup muffin tin with paper liners.
In a small bowl, mix together all of the wet ingredients. In a separate large bowl, mix together the dry ingredients.
Pour the liquid ingredients into the dry ingredients and mix.
Use an ice cream scoop & fill the liners 3/4 of the way
Bake for 18-20 minutes, or check with a toothpick in the center & check to see if the toothpick comes out clean and the cake bounces back.
Cool on a wire rack
Frosting:
Cream together the butter, eggnog, rum, nutmeg and powdered sugar with an electric mixer on medium speed. Add in more powdered sugar if needed to thicken the frosting.
Frost the cooled cupcakes. Sprinkle with cinnamon and garnish with a wafer roll or cinnamon stick.

New York Cupcakes in Bellevue, WA has gone all out for Christmas this year with their festive Holiday Cupcakes! Just this week they unveiled these super cute trees... all dressed up for Christmas!  These are classic vanilla cupcakes with buttercream, but can be made in almost any flavor!!

Mrs. Ginger Bread!! Gingerbread cupcakes topped with Maple Cream Cheese frosting and topped with a homemade mini gingerbread cookie, baked fresh in their workshop by their own little elves!

It is about 12 degrees here in Chicago and people are sipping hot beverages left and right to warm up. Well these peppermint hot chocolate cupcakes may not be hot or a beverage but they sure look tasty and cute!  The ladies of Icing Designs simply baked some chocolate cupcakes, swirled on some buttercream, and sprinkled them with some pepperminty and chocolate chips, adding a lovely candy cane "handle" to complete the hot cocoa mug look.
