Colorado Springs has its share of taco trucks, but the newest food truck in town is serving up some sweet delights, cupcakes, with a little help from Facebook.
The Springs Cupcake Truck's owners, Mike Bergman and Pat Kennelly, use the social networking site to tell people where they're going to be. They also ask their fans before they go out, where they should park.
Recently they also held a contest to name The Springs Cupcake Truck on their Facebook page; the winning name, CoCo.
The cupcakes are made by Cake Crumbs Bakery in Denver, owned by Mike and Pat's Niece. The bakery makes them special to survive delivery to the Springs, "They're dipped and decorated so they don't fall apart during the rickety ride over here," explains Mike.
Some of their flavors include:
Zippy Lemon
Lemon cake filled with fresh lemon curd and topped with cream cheese frosting and sparkling sugar
Mile-Hi Mocha
Decadent mocha cake with an espresso butter cream and toffee topping
Pikes Peak Pistachio
Nutty pistachio cake topped with amaretto butter cream, chocolate chips and crushed pistachios
Rockin’ Red Velvet
Southern red velvet cake with cream cheese frosting and sparkling sugar
Colorado Snowball
Almond flavored cake covered with rich chocolate and coconut
Carrot
Sweet carrot cake topped with cream cheese frosting and tangy dried cranberries

valentine's day Rachel in Bay Area and Los Angeles next week
I'll be in the Bay Area (for all of two days, January 27-28), and then in Los Angeles January 29-February 1st. Looking forward to meeting as many cupcake bakeries and eating as many cupcakes as I can. I'm hoping to meet up with Kimmie again, who drove down from the Bay Area to go to CupcakeCamp LA, again, so we can compare cupcake notes.

Have you stopped at the Cupcake Stop truck or gone by the location at The Limelight Marketplace?! Now there is a Cupcake Stop shop in the Village (70 Greenwich Avenue) which just opened in December. We're going there this Sunday afternoon to eat cupcakes. The first dozen for the group will be paid by Cupcakes Take The Cake; please bring cash/credit/debit card to pay for additional cupcakes and or beverages.

While the new store carries new challenges, I’ve already started enjoying the many benefits. In a brick-and-mortar location, only one employee on duty needs to have the food handling certification, and since I’ve been practically living in the store since we’ve opened, I’ve had that requirement covered. Many of my new employees here already have this certification, but I’ve also been able to hire and train those who don’t, and they’re able to begin work for me while getting certified concurrently. I think this distinction between the mobile food truck and brick-and-mortar licensing requirement has allowed me to bring on an exceptional staff.
Having a brick-and-mortar location also makes business a lot less contingent on weather. During the blizzard we experienced at the end of December 2010, we were unable to bring out our cupcake truck but had a steady day of business at 70 Greenwich. I also assume that in the summer when the temperatures outside get into the 90s, the cupcakes will be a lot easier to maintain in the brick-and-mortar location as compared to on the cupcake truck.

“They’re locked away right now,” Denon Moore explained.
The two trucks, one nicknamed Clyde and the other named Clementine, are apparently personas non grata in the City of Denver says Moore and her husband Sean.
“We were hassled weekly by a city inspector and told us we weren’t allowed to be parked downtown,” Denon Moore said.

valentine's day More Cupcakes on the Road
In case you haven't heard, More Cupcakes in Chicago recently put its first cupcake truck on the road in late October. In the first few days, they were giving away free cupcakes galore. They are normally on the road a few days during the week and they hit all the city's hot spots. Part of the joy of the cupcake truck is in not knowing exactly where and when it might show up. Sort of like a quiet Ice Cream Man of cupcakes with the silent song of Twitter.
I was able to try the luscious Cookies & Cream Cupcake along with the Coconut Cupcake straight from the truck. One of the features of this van is that there is a lighted display case right on the side of it. How do they get the cupcakes to stay in place while in motion?! It's a mystery.
