Colorado Springs has its share of taco trucks, but the newest food truck in town is serving up some sweet delights, cupcakes, with a little help from Facebook.
The Springs Cupcake Truck's owners, Mike Bergman and Pat Kennelly, use the social networking site to tell people where they're going to be. They also ask their fans before they go out, where they should park.
Recently they also held a contest to name The Springs Cupcake Truck on their Facebook page; the winning name, CoCo.
The cupcakes are made by Cake Crumbs Bakery in Denver, owned by Mike and Pat's Niece. The bakery makes them special to survive delivery to the Springs, "They're dipped and decorated so they don't fall apart during the rickety ride over here," explains Mike.
Some of their flavors include:
Zippy Lemon
Lemon cake filled with fresh lemon curd and topped with cream cheese frosting and sparkling sugar
Mile-Hi Mocha
Decadent mocha cake with an espresso butter cream and toffee topping
Pikes Peak Pistachio
Nutty pistachio cake topped with amaretto butter cream, chocolate chips and crushed pistachios
Rockin’ Red Velvet
Southern red velvet cake with cream cheese frosting and sparkling sugar
Colorado Snowball
Almond flavored cake covered with rich chocolate and coconut

Sweet carrot cake topped with cream cheese frosting and tangy dried cranberries

We've posted about a good number of cupcake lawsuits over the years, but this one has family drama - an uncle suing his niece! From Las Vegas Sun:
Pamela Jenkins, owner of the three Cupcakery shops in the Las Vegas area, says she's tired of lawsuits and just wants to create and sell cupcakes.
Jenkins, who has been sued twice by her uncle in Texas over their Cupcakery business dealings, issued a statement Wednesday denying the allegations in his latest suit.
Jenkins also indicated she won't be involved in any more trademark litigation and her statement would seem to undermine efforts by her uncle, Ricky Perritt, to obtain trademarks for The Cupcakery name and logo.
"Through research, I've found that the word 'cupcakery' existed before I opened The Cupcakery. I believe the use of 'cupcakery' as a noun can only maximize the exposure for myself and others who believe in the delicious spirit of cupcakes and cupcakeries. It is not, and never has been, my intent to limit the use of the word 'cupcakery' or purport to own the word, as my former partner is attempting to do. As I have received numerous requests nationwide regarding the phenomenon of cupcakes, the word 'cupcakery' and other cupcake-related questions of late, I felt it was the right time to share the glory of The Cupcakery and all cupcakeries freely," Jenkins said in her statement.

Crumbs Bake Shop, the country’s largest cupcake chain, will go public through a $66 million merger with an investment company, the 57th Street General Acquisition Corporation.
The deal, which is expected to be announced on Monday, gives Crumbs the money to execute its ambitious expansion plans...
Last year, Crumbs posted an estimated $31 million in revenue and generated $2.5 million in earnings before interest, taxes, depreciation and amortization. That translates into about 13 million cupcakes sold, Mr. Bauer said.
The investment company will pay Crumbs $27 million in cash and $39 million in stock. Crumbs owners also stand to receive an additional $44 million in stock depending on the company’s future stock performance and earnings. The deal is expected to close next month, resulting in Crumbs shares’ being listed on a major exchange.
The Bauers will retain a substantial stake in the business and continue to run the company. Edwin Lewis, a well-known former fashion executive who acquired 50 percent of Crumbs for $10 million in 2008, will remain on the company’s board.

With the growing emphasis on well-being and environmentally friendly and sustainable efforts, it seems the cupcake business is getting into the act. Cups, a cupcake shop that opened in La Jolla on Black Friday in 2009, uses organic ingredients and recycled materials in nearly all facets of its business.

Enough said. They are just wrong, and they will see. Cupcakes are not a "trend," despite the media hype around the idea of them as a trend. You can see from our steadily growing listings on the right-hand side, from the fact that the major cupcake bakeries (Magnolia Bakery, Sprinkles, Crumbs) are constantly expanding, from the explosion in events like Iron Cupcake and CupcakeCamp and online events like Cupcake Hero. Also, if that's the case, why is there always a giant line at Sprinkles in Beverly Hills? (I haven't been to Crumbs or Magnolia Bakery in LA so can't personally attest, but I've never been to Sprinkles when there wasn't a huge line.)

In August, after returning to Sweden, he opened Cupcake STHLM with a childhood friend, Mikael Ingeltun, who had spent the past few years as a chef aboard luxury yachts. Rather that importing an American craze, the pair say they are championing the contribution Scandinavian immigrants made to American home cooking.

From The Wall Street Journal (via Hit & Run), which covers Flirty Cupcakes and other Chicago food trucks being shut down temporarily:
Chicago's rules are for health and sanitary reasons. The City Council is currently considering some changes in food-truck laws. Brick-and-mortar restaurants are fighting the mobile insurgency, chasing trucks from their street fronts, calling police and snapping photos of the vendors in hopes of catching them illegally parked.
Holly Sjo, owner of The Cupcake Counter, a year-old downtown shop, called the cops when she spotted Ms. Kurtz parked near her business in a spot she believed to be illegal.
"She seems to only park next to other people's cupcake shops," Ms. Sjo says.
Ms. Kurtz denies the accusation. "I would never want to do that to another cupcake business," she says.
The food truck concept is "a quaint idea," says Dan Rosenthal, owner of Sopraffina Marketcaffe, a chain of Italian restaurants in Chicago. "But when you get right down to it, it creates an unlevel playing field."
A food-truck operation can get off the ground for under $150,000, while many restaurants spend more than $1 million on real estate and equipment to open their doors.
"It's an elitist thing," says food-trucker Mr. Maroni. "Just step up your game," he says. "McDonald's doesn't ask Burger King if they can open up across the street."

Nation's Restaurant News reports that Au Bon Pain is now selling cupcakes - funny because I was in one yesterday getting food, but didn't even venture near the bakery section. Will check them out today. Via Fork in the Road.

I'm so sick of seeing boring, unimaginative headlines like this one: "Pie to Cupcake: Time's Up," which was featured in The New York Times. There's a din of "___ is the new cupcake" and you know what? It's stupid. There is not actually a competition, and, yes, cupcakes can coexist with pie, macarons, whoopie pies, donuts, cookies, brownies and other desserts.
Pie had been lurking below the radar in recent years: taking cover during the ice cream trend, perhaps waiting to see which way the macaron tide would turn. (For proof that the cupcake craze has gone too far, consider the new turkey cranberry cupcake with gravy in the batter from Yummy Cupcakes in Los Angeles.)

Trisaetum vineyards graciously donated 2 bottles of their Trisae 2008 Pinot and we made it into a cupcake. The Perfect Pinot- our rich chocolate cake, Pinot black cherry filling with a pinot infused chocolate ganache. Heavenly! Sweetest Thing Cupcakes, a local baker that started in Newberg, opened at the center Nov. 2 in a kiosk near Regal Cinemas. They use natural, local and preservative-free ingredients and also have gluten-free cupcakes. Custom cupcakes and cakes are available.
